Screen or Drone

Beginner Mini 2 pilot here. I'm learning to operate my drone and am pretty cautious about how I fly. I seem to focus on the drone itself and don't watch the video screen. What is the best way to operate? How do you build trust in the drone and how you control it with the screen? What about rules that you must always see the drone itself? I see YouTube videos where the drone is obviously out of direct sight of the operator. Thanks.
