Wisdom Needed

Anyone here have experience with 3D photogrammetry? I've got a gig for some architectural designers who want to model a nature trail at 12 different spots, my role is to create a matrix of photographs that they can use to do this. I know there are proprietary software/apps that handle this start to finish but they're fairly expensive and the designers will handle file compilation on their end anyway, so something like Drone Deploy is not exactly necessary.

I've done a bit of my own research, but if anyone has any advice in this niche, I'd be super grateful. I'm flying a Mavic 2 pro, and I'm probably going to use the hyperlapse intelligent flight options to make this happen. Wondering though if there's potentially better options. And looking for advice with regards to how diligent I should be with overlapping pov and depth of field.
