Drones as a tourist, legal issues? [EU zone]

I have a drone for two years. I've passed the test and registered my UAV it's a DJI Mavic mini. Since we can go across the countries more and more I'm wondering how do you guys deal with all the legal issues. Do you ask for permission in each country that you're visiting or you're just flying and don't care about it? I was wondering about flying in Bucharest, Romania and in Croatia, but the amount of paperwork is just overwhelming.
